This week’s edition of Monday Munchies comes to you all the way from Melbourne. My fabulous foodie Aunty Di recreated this salad after eating it at a local restaurant.
It is a wonderful combination of red onion, crunchy fennel, fresh peas and asparagus, dressed simply with a squeeze of lemon and a drizzle of olive oil.
We think it could be improved further with a bunch of chopped mint and some watercress, but it was an exciting addition to our plentiful family dinner.
Topped with a poached egg and a side of crusty bread, this would make an ideal lunch…

I will be trying this one for sure.. I love all those greens! I would probably vamp up the dressing a little with some mustard and mint. A great summer salad!
